Judges

Gianaclis Caldwell (Technical)

She is a cheesemaker and writer who owns and runs Pholia Farm in Oregon. She is an American Cheese Society judge and her husband Vern is on the Board of ACS. She is the author of Mastering Artisan Cheesemaking and many other cheesy, goaty books. Gianaclis has been involved with the ADGA cheese competition since 2008.

Tim Gaddis (Aesthetic)

Tim is the owner of In Demand Cheese. He Is a Certified Cheese Professional of the American Cheese Society and is on the Board of Directors of ACS. He is a member of the International Guilde des Fromage. He worked at Murrays Cheese in 2003 and then was employed at Star Provisions as a cheesemonger until 2014. He was production manager of Many Fold Farm from 2014 until 2016, when he founded In Demand Cheese. He was an ACS judge in 2009 and 2012.
